La glace, douceur gentiment régressive qui s’impose à la période estivale… Produit éphémère par excellence, synonyme de moments hédonistes et le plus souvent partagés, elle évoque une forme de nostalgie liée à l’enfance. Les Français en consomment environ 6 litres par an, et 50 % des ventes sont réalisées sur une dizaine de semaines, en été, selon la Confédération Nationale des Glaciers de France (CNGF). Il y a les sorbets (sans matières grasses) ou les crèmes glacées (qui contiennent du lait ou des œufs), que l’on peut déguster en pot, en bac, en cône ou en bâtonnet. Toujours d’après la CNGF, organisme qui soutient et accompagne les glaciers depuis 80 ans, les parfums plébiscités seraient la vanille, le chocolat et le café pour les crèmes glacées et la fraise, le citron et la poire pour les sorbets.
